Found

Mike takes JoJo (our office mascot) on his daily walks by the railroad tracks behind our building.  He returned to the office one afternoon with an old, rusty piece of metal that vaguely resembled a letter of the alphabet. Vaguely. After spotting one, they started popping up everywhere and we have acquired quite the collection. Minus the possibility of a bout of tetanus, they are some pretty interesting finds. Lunchtime with mindsalt

Have you ever found yourself wondering what lunchtime is like here at mindsalt? Probably not. But this meal was too full of fried cookie goodness not to share.

Luckily for us, Spinelli’s, a local pizzeria, offers Fried Oreos on their menu. What better way to wash down your pizza than with a few deep fried cookies? Mike was the first to dig in and he gave them two thumbs up!

mindsalt client inspires giant cookie

We are currently working on a new project for edible Louisville, a publication that promotes the use of local foods and connects readers with the local chefs, growers, and retailers who provide those foods.

In working on this project, we came across this recipe for S’mores Stuffed Chocolate Chip Cookies. A s’more inside of a chocolate chip cookie? Needless to say, we were intrigued. So, naturally, I went home and whipped up a batch so we could do a little taste test here at the office.

As you can see from the pictures, it takes a fairly large amount of cookie dough to surround a s’more. The result is both monstrous and delicious. We might have to try this next…

mindsalt crew goes hunting…for ramps, that is

Last week the mindsalt gang was invited to work on a different kind of project for one of our clients. We spent the morning harvesting ramps at Woodland Farm.

If you are not familiar with ramps, you aren’t alone. Until we first learned that these wild leeks that walk the line between garlic and onion grew at Woodland, and that there is a small window of time in the spring when they can be harvested, we didn’t know much about them either. We are pretty much experts now, thanks to the horticulture staff at the farm.

After a short (or long, depending on who you ask) hike through the woods we came to a patch of land near a stream where the ramps grew in patches all around you. Before being let loose to try our hands at ramp harvesting, we were given a  short lesson on how to dig down into the soil to loosen the roots and pull the ramps out gently so as not to break off the bulbs. At Woodland they even take measures to preserve the land and ensure there will be more ramps next year by harvesting no more than one third of each patch. The ramps we picked went to a good home, too. They will be enjoyed by diners at Proof on Main where they will be used in various dishes.

All in all, we had a great morning on the farm. And we learned that spending a few hours with nature, instead of with our MacBooks, is good for the soul.
